Baked Pork Chops with Apple Stuffing

Swine flu has made me crave pork chops like you wouldn’t believe…so I made some! Publix had packages of “assorted chops” for only $.75 a pound! I found this new (to me) recipe on FoodFit.com. Wii Fit Week Fourteen!

I’m sure you thought I forgot about this didn’t ya? Nope, just decided that FREE chicken was more important.

So, not only did this week mark my fourteenth full week of using Wii Fit to lose weight, Monday was a special day:

Wii Fit Week Thirteen!

Sorry for the late post today…My schedule was crazy over the weekend and I was unable to do my Wii Fit on Sunday. So once I woke up today on my day off I took my body test and took some pictures for you!

If you are new, I just completed my thirteenth week with Wii Fit and am trying to not be fat anymore. I also have been eating/cooking healthier and so far I am pleased with the results! You can review my progress in my past posts: Day One, Week One, Week Two, Week Three, Week Four, Week Five, Week Six, Week Seven, Week Eight, Week Eleven and Week Twelve.

It has already been a long process, 93 days! I haven’t been good enough to work out EVERY one of those days, but I’m doing pretty good! Week Thirteen was especially decent:

Spiced Pork Chops with Sweet Potatoes

This is the second recipe that I have made from Gordon Ramsay’s Healthy Appetite cookbook. This one is a bit more substantial than the Mango, Avacado, and Smoked Chicken Salad I did a while back. This time I decided while flipping through the beautiful pages to make Ramsay’s Spiced Pork Chops with Sweet Potatoes.

This recipe was still relatively simple and I was able to throw it together after getting home from work, but before going out to karaoke at Big Daddy’s! I love me some karaoke with DJ Di! This meal helped power me to an amazing rendition of “You Outta Know” by Alanis Morrisette.

Wii Fit Week Eleven!

Yes I missed TWO weeks, I was a bad boy! But come April 1st I recommitted myself and have continued my Wii Fit program. I’m sorry this is late, but it is worth it!

The other night I decided to make a recipe out of my newest cookbook, Gordon Ramsay’s Healthy Appetite. Most (if not all) of these recipes come from Gordon’s BBC (now shown in re-runs on BBC America) The F Word. I love this show and my mouth waters at some of the food they make. Now I can try to make some of it.
