My Perfect Valentine!

Monday was an amazing Valentine’s Day with the love of my life ,Jenny Cate! We did dinner and a movie and exchanged very similar presents!

Dinner was at Seasons 52. Wow! I absolutely love that place! This was actually our third visit in the past couple months. The first was just a date night and was JC’s first visit. Then we went for my mom’s birthday. I had something different each time and can’t complain about a single item on any course. They were all delicious!

Kentucky (Un)Fried Chicken

If you have been watching television recently you may have noticed that Kentucky Fried Chicken is doing something different. Grilled chicken. I know that they have had a grilled chicken breast sandwich for about a year, but this is actually buckets of grilled chicken. Grilled chicken breasts, thighs and legs. An interesting thought, but one I’m sure they are doing to try to lure the millions of us trying to be healthy!

I must preface this review with the fact that I HATE my local KFC/Taco Bell. It is literally the slowest fast food restaurant on the face of the Earth. It can take 20 minutes to get your order and then there is absolutely no guarantee it will be correct. Today I went in a for a late lunch hoping there would be no other customers and that would allow them to serve me in a “fast” time. I was right. It was sad to see that with no one in the drive-thru and me being the only one in line that it took them five minutes and five different people were involved in my meal. Wii Fit Week Thirteen!

Sorry for the late post today…My schedule was crazy over the weekend and I was unable to do my Wii Fit on Sunday. So once I woke up today on my day off I took my body test and took some pictures for you!

If you are new, I just completed my thirteenth week with Wii Fit and am trying to not be fat anymore. I also have been eating/cooking healthier and so far I am pleased with the results! You can review my progress in my past posts: Day One, Week One, Week Two, Week Three, Week Four, Week Five, Week Six, Week Seven, Week Eight, Week Eleven and Week Twelve.

It has already been a long process, 93 days! I haven’t been good enough to work out EVERY one of those days, but I’m doing pretty good! Week Thirteen was especially decent:

Spiced Pork Chops with Sweet Potatoes

This is the second recipe that I have made from Gordon Ramsay’s Healthy Appetite cookbook. This one is a bit more substantial than the Mango, Avacado, and Smoked Chicken Salad I did a while back. This time I decided while flipping through the beautiful pages to make Ramsay’s Spiced Pork Chops with Sweet Potatoes.

This recipe was still relatively simple and I was able to throw it together after getting home from work, but before going out to karaoke at Big Daddy’s! I love me some karaoke with DJ Di! This meal helped power me to an amazing rendition of “You Outta Know” by Alanis Morrisette.

Wii Fit Week Eleven!

Yes I missed TWO weeks, I was a bad boy! But come April 1st I recommitted myself and have continued my Wii Fit program. The other night I decided to make a recipe out of my newest cookbook, Gordon Ramsay’s Healthy Appetite. Most (if not all) of these recipes come from Gordon’s BBC (now shown in re-runs on BBC America) The F Word. I love this show and my mouth waters at some of the food they make. Now I can try to make some of it.

Tofu!

No I am not quoting the old Budweiser tag line. This post is literally for my wonderful and beautiful sister Kaitlin (or Kaiti as she was known when she lived on the right coast). My sister is in many ways my opposite. She lives in the opposite corner of the country in Seattle. She is skinny and eats healthy stuff like tofu. Which brings me to the point of this post.

I was reading one of new favorite food blogs, Serious Eats, when I found this post which linked to this step by step instructional post about how to make your own organic tofu. (Yes I know it is very confusing with many different blogs linking to each other but I wanted to give credit where credit is due).

Now I’m no expert on tofu, but the recipe looks fairly simple and seems to have good results. I don’t foresee myself taking on this project, but maybe you non-meat eaters will? If you do let me know how it goes!
